Caramelized Onion Parmesan Spaghetti

 

Ingredients

4 vidalia onions sliced thin

2 shallots sliced thin

4 TB unsalted butter

Pinch Hippy Pilgrim Garlic Salt

Pinch Hippy Pilgrim Salt Free North End Seasoning

¼ cup Hippy Pilgrim Dipping Oil Starter

1/2 cup shredded Parmesan or Romano Cheese

½ cup neutral oil

1 clove garlic

3 egg yolks

Splash pasta water

Fresh herbs for garnish

 

Directions

Heat a large skillet over medium heat and add butter. Once melted add the onion and shallots. Cook for 10-15 minutes until browned. (Reserve a few Tablespoons to use as a garnish.)

Place the remaining onion mixture in a food processor or blender and add the salt through egg yolks. Process until smooth. Add back to the skillet on low heat while you boil a pound of pasta in water salted with Hippy Pilgrim Garlic Salt. This step adds a lot of flavor.

Add the cooked pasta to the skillet along with a splash of pasta water plus fresh herbs. Toss to coat. Serve topped with more shaved Parmesan and a Tablespoon of the onion mixture on top plus a drizzle of oil.

Low Carb Onion and Cheese Crust Pizza with Slivered Pepperoni, Candied Jalapenos and Hot Honey

Ingredients

1 cup Shredded Parmesan Cheese plus more if needed

2 cups Shredded Smoked Cheeses plus more if needed

2 sliced sweet onions

2 sliced shallots

Olive Oil

Hippy Pilgrim Salt Free North End Seasoning

Thinly sliced pepperoni

Thinly sliced fresh or candied jalapenos

Hot Honey or Balsamic Reduction for drizzling

 

Directions

Preheat oven to 400-425.

Line a cookie sheet or pizza round with parchment paper.

Add a layer of cheese.

Top cheese with a thin layer of onions.

Top onions with another thin layer of cheese.

Drizzle with olive oil and add the salt free seasoning, pepperoni, and candied jalapenos.

Bake for 18-20 minutes until browned and sizzling.

Remove from oven and allow to rest so the crust firms up.

Drizzle with hot honey or balsamic reduction before serving.
