Thanks so much for joining me for the weekly lives! I do it every Wednesday from 7-8pm EST on my Hippy Pilgrim Facebook and TikTok!

Here are some great recipes for summer!

Creamy Cucumber Salad

Servings: 4-6
Prep Time: 15 minutes
Chill Time: 20 minutes (optional, for best flavor)

Ingredients:

  • 2 large English cucumbers or 8 small Persian cucumbers thinly sliced over paper towel to absorb the excess moisture
  • 1/2 cup shallots, thinly sliced (optional for extra bite)
  • 3/4 cup sour cream (or plain Greek yogurt for a lighter option)
  • 3-4 tbsp vinegar any type
  • 1 tbsp olive oil
  • Pinch sugar
  • Handful of fresh chopped dill
  • 2 tsp Hippy Pilgrim Salt Free Garlic Herb Seasoning
  • 1 tsp Hippy Pilgrim Lemon Dill Garlic Salt (adjust to taste)

Instructions:

  1. Prep Cucumbers:
    Thinly slice cucumbers and place them on paper towels and let sit for 10 minutes to draw out excess water.
  2. Make Dressing:
    In a medium bowl, mix together the sour cream through the dill and stir until smooth and well combined.
  3. Combine:
    Add cucumbers (and shallots if using) to the dressing and toss to coat evenly.
  4. Chill (optional):
    Cover and refrigerate for 20 minutes to let the flavors meld. This step enhances the taste but can be skipped if you're short on time. Add more vinegar if you want a thinner dressing.
  5. Serve:
    Serve it up and this will go fast!

 Tips:

  • Swap sour cream with mayo + yogurt for a creamier, tangier profile.
  • Use spiralized cucumbers for a fun presentation at picnics or potlucks.

Spicy Chimichurri

Yield: ~1 cup
Prep Time: 10 minutes
Rest Time: 15 minutes (optional, for flavor infusion)

  1. Mix Herbs & Garlic:
    In a medium bowl, combine all ingredients and whisk to combine well.
  2. Rest (Optional):
    Let the chimichurri sit at room temperature for 15–30 minutes to let the flavors meld.
  3. Serve:
    Spoon over grilled steak, chicken, shrimp, roasted vegetables, or even use as a marinade or dipping sauce.

 Variations & Tips:

  • Want a smoother texture? Pulse ingredients briefly in a food processor.
  • For a milder version, reduce garlic and skip the extra red pepper flakes.
  • Keeps in the fridge for up to 5 days—just stir before using.

 

Savory Coffee-Rubbed Shallot Burgers 

Servings: 6–8 burgers (depending on size)
Prep Time: 10 minutes     Cook Time: 8–10 minutes

Ingredients:

  1. Mix the Burger Blend:
    In a large bowl, gently mix together all ingredients. Be careful not to overwork the mixture—just enough to evenly distribute the ingredients.
  2. Form Patties:
    Divide the mixture into 6–8 even portions and form into patties about 3/4-inch thick or balls to make smash burgers. Press a slight indentation in the center of each patty with your thumb (this helps prevent puffing during cooking).
  3. Grill or Pan-Sear:
    • Grill: Preheat grill to medium-high. Grill burgers for about 4–5 minutes per side for medium, flipping only once.
    • Stovetop: Heat a cast-iron skillet or heavy pan over medium-high heat. Sear patties 4–5 minutes per side until browned and cooked to desired doneness.
  4. Optional – Add Cheese:
    Add your favorite cheese (cheddar, gouda, or blue cheese pair well) during the last minute of cooking. Cover briefly to melt.
  5. Serve:
    Let patties rest 2–3 minutes. Serve on toasted buns with your favorite toppings: lettuce, tomato, caramelized onions, pickles, and a tangy aioli or mustard.

 Pro Tips:

  • Grated onion keeps burgers super moist—don’t skip it.
  • Don’t over-handle the meat when forming patties or they’ll get dense.
  • The Coffee Rub creates a crust-like sear—avoid flipping too early.
