Hippy Pilgrim Chicken Cutlets
A versatile, flavor-packed chicken cutlet recipe that freezes beautifully and can be transformed into countless meals—from Chicken Parmesan to crispy chicken sandwiches.

Ingredients
- 4 chicken breasts, cut into 12 pieces and pounded thin
- 1 cup flour
- 4 farm-fresh eggs
- 3 cups Panko bread crumbs
- ½ cup Hippy Pilgrim Sundried Tomato Dipping Oil Starter
- 4 Tbsp Hippy Pilgrim Salt-Free North End Seasoning, divided
- 3 tsp Hippy Pilgrim North End Garlic Salt, divided
Instructions
- Prepare Breading Stations:
- Flour Station: In a shallow dish, combine flour with 2 Tbsp Salt-Free North End Seasoning and 1 tsp Garlic Salt. Mix well.
- Egg Station: Crack eggs into a second shallow dish and whisk until smooth.
- Breadcrumb Station: In a third shallow dish, combine Panko, ½ cup Sundried Tomato Dipping Oil Starter, remaining 2 Tbsp Salt-Free North End Seasoning, and remaining 2 tsp Garlic Salt. Stir to coat the crumbs evenly.
- Bread the Chicken:
- Dredge each chicken piece in the seasoned flour.
- Dip into the whisked egg.
- Coat thoroughly in the seasoned breadcrumb mixture.
- Place breaded cutlets on a baking sheet.
- Chill (Important Step!):
- Freeze the breaded cutlets on the sheet for 15–20 minutes. This helps the coating adhere during cooking.
- Pan Fry the Cutlets:
- Fry in your preferred oil until golden brown and cooked through.
- Transfer to a cooling rack lined with paper towels to drain excess oil.
- Season immediately with a pinch of garlic salt while still hot.
Tips & Serving Ideas
- Serve over Caesar salad, turn into Chicken Parmesan, or layer into a fried chicken sandwich.
- Use for Chicken Piccata or Chicken Marsala—the flavor base works with any of these dishes.
- Make-ahead: Freeze uncooked cutlets in a single layer. Once fully frozen, transfer to a freezer bag for easy future meals. They’ll taste like you just made them!
- Cut the pieces smaller to make chicken fingers instead of large cutlets.
