Fondant Potatoes

This recipe is so easy yet so impressive. Full of flavor with the simplest of ingredients so be sure they are all quality. I use homemade bone broth for this recipe to elevate the flavor.

Ingredients

4 russet potatoes peeled and cut into cylinders to look like scallops

2-3 TB any type of oil

1 tsp Hippy Pilgrim Rosemary Garlic Salt

1 tsp Hippy Pilgrim North End Salt Free Seasoning or fresh herbs like rosemary and thyme

3 TB unsalted butter

1 cup homemade chicken bone broth or whatever you have on hand

 

Method

Preheat the oven to 400 degrees.

Toss the peeled cut potatoes in 2 TB of oil plus the garlic salt and salt free seasoning.

Add the potatoes flat to a hot oven proof skillet coated with the remaining TB of oil. Cook until nicely browned and flip doing the same to the other side.

Add the butter to the pan and when fully melted add the broth.

Place the skillet in the oven for 25-30 minutes until the liquid is almost fully absorbed.

Finish with additional Rosemary Garlic Salt and serve hot!
