My Mom’s Swedish Meatballs
Meatball Ingredients
1 pound of beef/veal/pork mix
1 small onion finely minced
1 egg
1/3 cup breadcrumbs soaked in ¼ cup light or heavy cream
2 TB fresh parsley
Dash of nutmeg and cinnamon
1 tsp Hippy Pilgrim Original or Pinot Noir Garlic Salt
Directions
Combine all ingredients, form into small meatballs using a mini ice cream scoop ( makes 32) and bake at 350 for 15 minutes.
Sauce Ingredients
2 cups beef gravy OR 2 cups beef stock plus 2 TB butter and 2 TB flour to make a roux and thicken the beef stock
1 cup light cream
1/2 cup strong coffee
Dash cinnamon and nutmeg
3 TB Worcestershire Sauce during the last few minutes of cooking
Whisk all sauce ingredients and add to a crockpot. Add the cooked meatballs along with any juices and cook on low for an hour. Then increase to high for an hour until the sauce thickens. Then add the Worcestershire Sauce and stir. Serve with the potato salad recipe below which is also my mom's which I've added my seasonings to for a more modern version.
My Mom's Potato Salad
Ingredients
2 pounds potatoes any type peeled and cut into medium sized chunks
1 cup mayonnaise
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1/4 cup chopped fresh parsley
2 tsp Hippy Pilgrim Shallot Garlic Salt
2 tsp Hippy Pilgrim Garlic Herb Salt Free Seasoning
1 TB vinegar, any type
1 tsp organic sugar
Directions
Add the peeled potato chunks to water seasoned with Hippy Pilgrim Garlic Salt. Boil over high heat until soft about ten minutes. Strain potatoes and add to a large bowl. Add remaining ingredients and stir well to combine. Refrigerate for a few hours to allow the flavors to meld.
